Pineapple can be used raw or cooked. To prepare pineapple for use, cut off the top and base, stand the pineapple upright and cut the peel in a downward motion. The pulp inside can be left or removed according to preference, although it is edible, and can even be squeezed to extract juice. Raw pineapple can be eaten as is and juiced or pureed to make smoothies. Fresh pineapple can be roasted, grilled or baked for desserts, including pineapple upside-down cake. It can also be cooked and sweetened to garnish custards and cheesecakes.
