Zucchini squash is mild in flavor and versatile and can be prepared in sweet or savory recipes. Grate the zucchini and add it to muffins or bread mixes, or use it to make vegetarian pies and tarts. Thinly sliced zucchini is great for adding to salads or as part of fresh (raw) appetizers such as vegetarian carpaccio. When thinly sliced lengthwise, zucchini can be an excellent substitute for traditional pasta in pasta preparations. Zucchini slices can be grilled, steamed or fried. They are ideal for hollowing out and baking when stuffed with meats, cheeses and grains. Additionally, zucchini flowers can be stuffed with soft cheeses and herbs and then tossed and fried.
